1 Tbsp unsalted butter
1 large garlic clove
1 tsp finely grated orange rind
4 firm plum tomatoes, or 2 large beef tomatoes
salt and black pepper
fresh basil leaves, to garnish
DIRECTIONS
In a small bowl, soften the butter with a wooden spoon and blend with the garlic, orange rind and seasoning. Chill the butter for a few minutes.
Preheat the oven to 400 degrees farenheit. Halve the tomatoes crossways and trim the bases so they stand firmly.
Place tomatoes in an ovenproof dish and spread the garlic butter equally over each tomato half.
Bake the garlic tomatoes in the oven for 15-25 minutes, depending on the size of the tomato halve, until they are just tender. Serve garnished with basil leaves.
